Flourless Chocolate Chip Chickpea Blondies with Sea Salt

Many of my Instagram followers asked for this unique blondie recipe. These blondies are vegan, gluten-free and super healthy. 

Prep Time : 5min
Cook Time : 20min

Ingredients:
Cooking spray
1 can (15oz) chickpeas (rinsed and drained)
1/2 cup all natural almond butter or peanut butter
1/3 cup pure maple syrup or agave nectar (you could use honey if you aren't vegan)
2 tsp vanilla
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1/3 cup vegan (or regular) chocolate chips plus 2 tbsp
Sea salt, for sprinkling 

Instructions:
1. Preheat oven to 350F and spray 8x8 inch pan with cooking spray. Alternatively line the pan with parchment paper if you don't have spray. 
2. In a food processor, all all the ingredients except the chocolate chips and process until smooth. Hint: if you heat the chickpeas with hot water or in the microwave for 25-30 seconds they will purée easier. 
3. Once smooth, fold 1/3 cup chocolate chips into the batter
4. Spread batter evenly in prepared pan then sprinkle the remaining 2 tbsp of chocolate chips on top. Hint: spray your spatula with cooking spray to avoid batter sticking to it as you spread. 
5. Bake for 20-25 min or until toothpick comes out clean and edges are slightly brown. The batter may look underdone but you don't want them to dry out. 
6. Cool pan for 20 min on a wire rack. Sprinkle with sea salt and cut into squares. 

An 8x8 pan makes 16 - 1 inch squares

Note: adding an egg to the batter will make it more cake-like but not vegan. You can use your favourite nut butter, just make sure it's all natural (Wow Butter works!). Add in other things like nuts, dried fruit or other types of chocolate.

Joe Tries to Wrestle the Christmas Spirit into Rogue Dinosaur

Day 4 - December 4

Last year during my ProjectLife365 and Glimpse Instagram challenges I started a little fun series with #roguedinosaur. He occasionally made appearances in my photos when I needed something a little more creative for the daily prompt. Not surprising, Joe had to make and attempt to wrestle the grinch out of him and get the Christmas spirit in. I'm not sure what #roguedinosaur thinks of his antics... could be risky for Joe.

Joe Finds Himself in Another Tight Situation

Day 3 - December 3

If you followed along with Joe last year, you know he got himself into a few tight situations. I think, perhaps, he is one of the troublemaker elves in Santa's elf brigade. I'm starting to question his validity in teaching my son that he's to stay out of mischief. In any case, it looks like Joe's night started off with good intentions with a little colouring, but ended with him stuck - with not a lot of choices.

Joe Takes his Gaming Seriously

Day 2 - December 2nd

Around here, the dinner conversation reverts to episodes of Minecraft videos on YouTube, and how to beat the next big bad villain in the most recent, most popular video game. So I guess it's no surprise that Joe decided to borrow Cian's DS and pull an all-nighter playing Lego Batman and whatever other games he could find. Joe obviously takes gaming seriously as well. I may have to hide the DS from him too!

Joe Cooks a Traditional Elf Breakfast

Day 1 - December 1st

Is there any better way to wake up than with a hot breakfast, cooked just for you?? Joe decided to cook his traditional "elf" breakfast this morning of spaghetti, covered in candy cane chunks, chocolate chips and candy sugared sprinkles... and topped of course with real Canadian maple syrup - and a lot of it!

Cian on the other hand, didn't think this was so hot - even though he has a sweet tooth, and opted for Fruit Loops instead.

Our Mischievous Elf on the Shelf

In 2012, we got a visit from an Elf on the Shelf. The story goes, these elves are sent from Santa to make sure all things are running smoothly among kids (and adults??) in the household; and progress is reported nightly back to Santa.

Our elf Joe, makes his daily appearances starting December 1st. Although he's sent to make sure we're all following the rules and not creating trouble, he's usually the one up to no good, and can be found in the morning having completed numerous acts of mischief. Last year, he even had the Toy Story Army men after him (see below)...

The blog is currently under construction...

... you'll be seeing that a lot until I get this thing up and start writing. When you come back hopefully there will be things to read that are far more entertaining than constantly seeing "this page is currently under construction...". 

The thing is, there's usually a story to tell behind the photos I take, and I need a place to write about what I was thinking or why I came to capture that moment,  what I learned. Or maybe all I need is a place to document my thoughts for the day - or document my life through photos. 

This is my photography journey, life journey, and adventures along the way.
